Young Chefs Armed with Knives on the ALKÜ Stage

ALKÜ The "Future of Cuisine Panel in the Light of Gastronomy Trends Panel" was organized by the Gastronomy and Culinary Arts Community within the scope of the UNIDES project on 4-5 May 2026. Academicians, industry professionals and students came together at the two-day event. One of the notable moments of the panel was the knife presentation ceremony symbolizing the professional identities of first-year students. Rector Prof. Dr. Kenan Ahmet Türkdoğan emphasized that gastronomy is more than just feeding the stomach, it is about keeping the culture alive and wished success to the students. Türkdoğan pointed out the cultural depth of the profession by saying, "A plate is sometimes a geography, sometimes a mother, and sometimes the memory of a nation." A total of 66 students received their knives from protocol members.

The Future of Kitchen and Technological Transformation

On the first day of the event, the topics "From Bean to 3rd Generation Coffee" and "Transformation in Gastronomy" were discussed, while on the second day, technological revolutions were explained practically. Participants were shown how to use modern kitchen appliances such as Sous Vide, Thermomix, Smoking Gun and Siphon. In the afternoon sessions, the historical process of food and beverage culture was examined.

Tradition and Vision Together

Assoc. Prof. Head of Gastronomy and Culinary Arts Department. Dr. Oğuz Nebioğlu stated that the presentation of the knife is a deep-rooted ritual similar to the medical gown-wearing ceremony. Nebioğlu stated that this tradition reminds of patience and discipline. Community President Saliha Sena Güven noted that the panel created a vision for the students. Vice Rector Prof. attended the program. Dr. Işık Bayraktar and ALTSO Tourism Vocational School Director also attended.
